Summer Bizeau, Grade 10


2 tsp. olive oil
salt & pepper to taste
1 lb. ground beef
1 onion finely diced
2 tsp. minced garlic
4 c. coarsly chopped cabbage
2 carrots peeled, quartered & sliced
4 c. beef broth
3 - 8 oz cans tomatoe soup
1/2 c. white rice/rice of choice
1 bay leaf
3 tbsp. brown sugar
2 tbsp. parsley

Heat olive oil in a large pot over medium/high heat. Add the ground beef & season with salt & pepper to taste. Break up the meat and cook until browned (4-5 mins)
Add onion & garlic, cook for 2-3 mins. Add cabbage, carrots, beef broth, tomatoe sauce, rice, bay leaf and brown sugar to the pot.
Season with salt & pepper to taste. Bring to a simmer and cook for 25 mins or until rice is tender.
Remove bay leaf and discard. Sprinkle with parsley & serve.
