Dough:
2 cups sour cream
4½ cups flour
2 tablespoons melted butter
2 eggs plus 1 yolk
2 teaspoon salt
2 tablespoon vegetable oil

Potato Cheese Filling:
7 large baking potatoes
2 cups shredded cheddar cheese
¾ stick butter
1 med onion, sauteed in butter
salt and pepper

Cheese Filling (a little runny):
1 cup ricotta
1 teaspoon lemon juice
1 tablespoon sugar
1 egg and 1 yolk
(add about 6 tablespoons more cheese to combat runniness and also could add 2 tablespoons sour cream)

Directions:
Directions:
Mix everything with hands, pulling dough off your fingers. Kneed into a ball. Cut seal. Drop into boiling salted water for about 8 minutes. Cool and fry.
