1 cup butter- softened
1 cup brown sugar
1 cup white sugar
2 large or ex large eggs
1 teaspoon soda
1 tablespoon vanilla
1/2 teaspoon salt- if using unsalted butter increase the salt to 1 teaspoon
1 teaspoon baking powder
1 1/2 cups quick oats
1/2 cup chopped pecans or walnuts
1/2 cup coconut-optional
2 cups flour
12 oz chocolate chips either milk chocolate or semi sweet

In large bowl mix butter and both sugars till well blended. Add eggs and beat until fluffy. Add salt, baking soda, baking powder and vanilla. Mix well. Add flour a 1/2 cup at a time blending well after each addition. Add oats, nuts, coconut, and chocolate chips last. Blend well. Refrigerate for 30-45 minutes before baking. Drop by spoonful onto greased baking pan and bake at 350º for 10-12 minutes depending on the size of the cookie. Remove from oven when lightly golden brown on the edges of the cookie for gooey cookies. Bake for 2 minutes more for crisper cookies.

This recipe comes form the University of Evansville. Once a week this cookie was made for the students. People would stand in line a long time on the day these cookies were made waiting to get some. They are a favorite of ours too!
