4 tbsp. butter
¼ c. flour
2 ½ c. milk
8-10 oz. cheese block, grated
8 oz. uncooked macaroni

Cook macaroni al dente, with salt, and drain.

While macaroni is cooking, prepare cheese sauce. Melt butter in saucepan over med-low heat. Add flour and cook until bubbly. Turn off heat and slowly add milk. Turn heat to med/med-high, stirring frequently. When sauce is bubbly, stir constantly for 1 min. Turn heat off. Add grated cheese, a little at a time. After cheese has melted, add macaroni. Less is better, so you might not need all 8 oz. Pour into glass 9x12 pan and bake at 350ºF for about 20 min. or until edges are bubbly.

I grew up eating this, and I didn't know "boxed" macaroni & cheese existed until I was an adult. This is a favorite dish for my family, and I always triple the recipe using 2 lb. Private Selection extra sharp white cheese block. Must use quality extra sharp yellow or white cheddar cheese (Cracker Barrel, Tillamook, Private Selection) for the best results.
