1 c. flour
½ tsp. salt
¼ tsp. cayenne pepper

Directions:

1. Beat 2 eggs in shallow bowl.

2. In another shallow bowl or in a ziplock bag, combine flour, salt, and cayenne pepper.

3. In a 3rd shallow bowl or in another ziplock bag, add 1 c. cornmeal.

4. Coat fish in flour mixture, dip in egg, and dredge in cornmeal.

5. Fry in hot oil for 2-4 min. per side.
