2- 4 to 5oz, thin White Fish fillets
Salt and Pepper to taste
2T Flour
2T Oil
4T Butter, cut into pieces
1T fresh Lemon Juice

Directions:
Directions:
Pat dry fish and sprinkle with salt and pepper then flour, set aside. Melt butter and salt and pepper to taste about 3 minutes, stirring occasionally until golden brown and nutty smelling. Pour into small bowl and add lemon juice and pinch of salt and pepper. Stir then taste when cool and adjust lemon. Heat oil in non-stick skillet on high heat. When there are slight whisps of smoke add fish. Cook about 1.5 minutes until golden brown and crispy edges, turn and cook other side. On plate, drizzle sauce, lay fish and garnish with parsley.
