12oz Spaghetti
1/2c frozen Peas
4 slices, thick-cut Bacon
1 Lg Egg yolk
3T Half and Half
Salt and Pepper
1/2c grated Parmesan
1T fresh Tarragon
1T Olive Oil
4 Scallions, thinly sliced

Directions:
Directions:
Cook pasta per directions adding peas in the last 30 seconds . Reserve 1c cooking liquid, drain pasta and peas and return to pot. Cook bacon. in bowl, whisk yolk, half & half, salt and pepper. Stir in parmesan and tarragon. Heat oil in skillet on med/low. Add scallions and cook until just softening, 1-2 minutes. Remove from heat. Add pasta, peas and bacon to skillet. Add yolk mixture and toss to coat, adding some reserved pasta water (1/4c at a time) if pasta seems dry.
