2 teaspoons olive oil
1 cup chopped onion
1 cup diced carrots
1 cup sliced celery
1 garlic clove, minced
1/4 cup all-purpose flour
1/2 teaspoon dried oregano
1/4 teaspoon dried thyme
6 cups low-salt chicken broth
4 cups diced peeled baking potato
1 teaspoon salt
2 cups diced rotisserie chicken
1 cup evaporated skim milk
2 cups of uncooked egg noodles

Directions:

1. Heat olive oil in stock pot on medium heat.
2. Add chopped onions, carrots, celery and garlic. Saute for 5 min.
3. Sprinkle flour, oregano, and thyme over veges and cook for 1 min.
4. Stir in broth, potato and salt. Bring to boil
5. Reduce heat and simmer partially covered for 25 minutes (until potatoes are cooked through)
6. Add chicken, milk and noodles and cook for an additional 10 minutes.
