1.5c (about 6oz) coarsely chopped fresh Rhubarb
1T + 8T + 1/4C + 2T Sugar, divided
1/2c Canola Oil
1 Egg
1/2T Vanilla Extract
1.5c Flour
1/2tsp each of Salt, Baking Soda and Cinnamon
1/8tsp Baking Powder
1/4c chopped Pecans (optional)

Directions:
Heat oven to 350 degrees. Grease and flour 8x4 loaf pan. Toss rhubarb with 1T sugar, let stand. In large bowl, beat egg, oil, vanilla and remaining sugar until well blended. In another bowl whisk flour, salt, baking soda, cinnamon and baking powder. Gradually beat into oil mixture (will be thick). Stir in rhubarb and pecans. Transfer to baking pan. Bake 50-60 minutes until knife in center comes out clean. Cool 10 minutes.
