1 partially baked Pastry Crust (homemade single pie crust or 1 refrigerated)
2T Butter
2c sliced Baby Portobello Mushrooms or Cremini Mushrooms
1/2c Green Onions, thinly sliced
1 clove Garlic, minced
1c Baby Spinach
6 Eggs
1.5c Heavy Whipping Cream
1/2tsp each of Salt and Pepper
1/4tsp nutmeg
1c shredded Swiss cheese

Prepare pie crust: Heat oven to 450 degrees. Line a 9" pie plate with homemade pastry for single crust pie or 1 rolled, refrigerated, unbaked pie crust. Line pastry with foil and bake 8 minutes. Remove foil and bake another 4-5 minutes until set and dry. Reduce oven temp to 325. In large skillet melt butter (med/hi) then add mushrooms, green onion and garlic. Cook and stir about 6 minutes, until mushrooms are tender. Stir in spinach and cook until slightly wilted. in large bowl, lightly beat egg and whisk in cream, salt, pepper and nutmeg, Stir in swiss cheese and mushroom mixture. Pour into pie crust. Bake about 50 minutes until puffed and golden. Let cool 10 minutes.
