3 lb. – chicken pieces
2 tablespoons - olive oil
2 teaspoons – onion powder
3 teaspoons – garlic powder
1 teaspoon – Italian Seasoning
1 teaspoon – smoky paprika
1 teaspoon salt

Directions:
Directions:
1. Preheat oven to 400ºF degrees.
2. Rub chicken with olive oil.
3. Mix seasonings together and rub all over the chicken.
4. Add leftover spices and push under the skin.
5. Place chicken skin side up on rack over foil lined pan and place on top rack in the oven. Flip over after 20 minutes. Turn over and add more spice and put back in the oven at 450ºF for 10 – 15 minutes.

Same spices can be used on fingerling potatoes, drizzled with olive oil and baked in the oven with the chicken.
