Winter veggie could be Squash or Spring veggie could be Asparagus

Butter or olive oil enough to cover the bottom of the pan
2 onions
1 winter squash (I prefer butternut or the giant crookneck I grew this year!)
or
1 bundle of asparagus
2 cups chicken stock

Directions:
Directions:
Peel, seed and slice squash into 1 cubes (this is the hardest part of the recipe) or snap the asparagus spears to remove woody bottoms; what's left chop into uniform 1" pieces. Cut onion in half and slice into half rings.

On medium heat add butter or oil to deep stockpot; add onions and stir occasionally till just softened. Add squash and stir quickly. Add chicken stock to cover squash. If not fully covered add water to cover. Add salt and pepper to taste.

Bring to a boil and then turn down to medium low. Cook until squash is softened, about
30 minutes. Turn off heat and let cool slightly. Puree the soup with either immersion blender, in food processor or blender.
