6 C chopped, fresh broccoli florets
1 (10¾) can condensed cream of mushroom soup
1 C mayonnaise
½ stick melted butter
2 large eggs, lightly beaten
½ tsp salt
¼ tsp pepper
1½ C grated extra sharp cheddar cheese
1 full sleeve of Ritz crackers, finely crushed

Directions:
Directions:
Place broccoli in a pan of water. Bring to a boil. Cover and steam for 5 minutes. Drain and chop into smaller pieces. Preheat oven to 350º. In a large bowl, combine broccoli, soup, mayonnaise, butter, eggs, salt and pepper. Mix well. Add 1 C cheese and mix again. Place mixture in a medium buttered casserole dish. Sprinkle remaining cheese and crackers on top. Bake for 30 - 40 minutes and let stand for 15 minutes before serving.
