9" Pie Shell
8-10OZ grated Swiss Cheese
3 Eggs
1C Whipping Cream
1tbsp grated Onion
dash of Cayenne Pepper
dash of Black Pepper
1tsp dry Mustard
1/2LB side Bacon

Preheat oven 400F

Line pie plate with pastry and chill

Cook one slice of bacon to a limp state and put aside

Fry the rest of the bacon until crisp, drain on absorbent paper

Sprinkle on bottom of shell

Add grated cheese

Top with sautéed golden brown onion and drained on absorbent paper

Lightly beat eggs, cream and seasoning

Beat again lightly and pour this mixture over the cheese

Add limp piece of bacon, which has been cut into 1/2" pieces

Carefully place pie in preheated oven and cook for 15mins at 400F; Reduce heat to 350F and bake for approximately 35-40mins more

Test custard with a knife, it should come out clean

Serve while warm, can be re-heated
