Crumb Pie Recipe

Pie Crust:
1½ C toasted bread crumbs
½ C butter
½ C sugar
2 tsp cinnamon

Custard:
3 egg yolks
2 tbsp flour
⅔ C sugar
1 tbsp lemon extract
2 C milk

Topping:
3 egg whites



Directions:
Directions:
Put ½ of the pie crust mixture into a pie pan and press. Bake 10 minutes.
Cook all custard ingredients on stovetop over medium heat until thick and pour into pie crust. For the topping, beat the 3 egg whites until stiff. Put over custard. Add remaining crumbs on top. Bake at 325º for 25 minutes.
