2 cups sweet butter
1 cup powdered sugar, you will need additional sugar for coating
1 egg yolk
1 tsp brandy or mastiha (optional)
4½ - 5 cups flour
1 cup chopped almonds (optional)
2 tsp vanilla
1 tsp baking powder
Orange blossom water (optional)*
Directions:
Directions:
1. Melt butter and carefully pour into mixing bowl, being sure to leave any salt or water out.
2. Refrigerate until soft consistency, then put on electric mixer and whip until light and fluffy.
3. Beat thoroughly after each addition! Add 1 cup powdered sugar, egg yolk, vanilla, and brandy.
4. Add in chopped nuts if desired. Mix until incorporated.
5. In a separate bowl, gently combine flour and baking powder.
6. Add flour mixture gradually until a soft dough is formed that can be handled easily.
7. Take about a teaspoon at a time and roll into small balls.
8. Place on cookie sheet which has been covered in parchment paper.
9. Bake at 350º for 15 minutes.
10. When done spritz with orange blossom water and then gently roll in powdered sugar.
11. Store in an airtight container in powdered sugar.

* You don't have to do this step, you can just roll the cookies in the powdered sugar, the heat alone will make the sugar stick.
