Ingredients:  
Ingredients:  
1 cup raw quinoa
15 oz can black beans, rinsed and drained
1 mango, peeled (or diced Craisins)
1 red pepper, diced small
1 jalapeño, finely diced
Dressing:
1 bunch thinly sliced green onions
1 cup chopped cilantro
2-3 Tbsp canola oil
4-6 Tbsp red wine vinegar
1-2 tsp sugar
½ tsp salt
½-1 tsp black pepper

Directions:
Directions:
Cook quinoa according to package directions. Cool to room temperature. Prepare dressing. Mix all ingredients and toss gently. Refrigerate overnight for best flavor.
