2T Flour
1c Sugar
2.5tsp Salt
1.75c unsweetened Pineapple Juice
2 Eggs, beaten
1T Lemon Juice
3qt Water
1T Vegetable Oil
1-16oz Acini Di Pepe pasta
3-11oz can Mandarin Oranges, drained
2-20oz crushed Pineapple, drained
1c Mini Marshmellow
1c shredded Coconut
8oz Whipped Topping, thawed

In saucepan, combine sugar, flour, 1/2tsp salt, pineapple juice and eggs. Stir and cook over medium heat until thickened. Remove from heat, add lemon juice and cool to room temp. Bring water to boil, add oil and remaining salt and cook pasta until al dente. Rinse under cold water and drain. In large bowl, combine pasta, egg, milk, oranges, pineapple and whipped topping. Mix well and chill overnight. Before serving, add marshmellow and coconut.
