8oz Cream Cheese, softened
1/4c Butter, softened
2lb Powdered Sugar plus 1/2c to roll mints
1-2tsp Mint Extract
Gel Food Coloring

Directions:
Directions:
Combine cream cheese and butter and mix until smooth. Add 1c powdered sugar and mint extract then gradually add remaining powdered sugar. Separate into as many bowls as colors of food coloring. Cover and refrigerate for 2hrs. Line sheet pan with parchment paper and dust with powdered sugar. Make 1" balls and put onto sheet then press with fork. Let stand for 4 hours.
