3 lbs beef stew meat, cut into 1 inch cubes
8 oz olive oil
4 tbsp flour
4 cups water
3 cups chopped celery
3 cups chopped onions
2 cups chopped potatoes
3 cups chopped carrots
1 tsp oregano
salt and pepper

Directions:
Directions:
Fry beef cubes on medium heat in pan until browned, approximately 10 minutes. Add flour, stir and cook for 3 minutes. Add water, stir and cover and cook over low heat for an additional 20 minutes. Add celery, onion, oregano, carrots and potatoes. Cook an additional 60 minutes on low. Enjoy!
