1 lb Mussels
2 lbs Calamari (rings and tentacles)
8 oz olive oil
6-8 garlic cloves (chopped fine)
2 large onions chopped
2 cups rice
4 cups chicken stock (can substitute veg stock)

Directions:
Directions:
Wash mussels and dry. In a shallow pan fry garlic on low in half the olive oil, being careful not to brown. When translucent, add mussels and cook covered for about 2-5 minutes or until all the mussels open. If you buy whole calamari pieces, cut the tubes into 1/2 inch rings. Rinse them well and pat dry. Saute onions until translucent, add calamari pieces. The calamari will be done when it is no longer translucent and there is water in the bottom of the pan.

Cook the rice as directed by brand you chose. Use the stock instead of water. To the rice add one small can of clams with the juice. Transfer to a serving dish and top with calamari and mussels.
