° Salt - a teaspoon
° Milk - 4 cups
° Chicken broth - a cup
° Gouda cheese, grated - Cuban
° Rustic herbs - a tablespoon
° Toasted croutons to serve - as desired

Directions:1- Melt the butter in a saucepan over medium heat, and add the onions, stirring from time to time, until they are tender.
2- Add the flour and mustard, and stir, then gradually pour in the milk and broth, mixing continuously, until the mixture thickens.
3- Season with salt and rustic herbs, then add cheese and stir until completely melted.
4- Take the pot off the heat and pour the soup onto the serving dishes.
5- Spread more cheese on top in addition to the croutons, then serve the dish on your plate.
