Ingredients: 2 pounds ground beef 2-3 8 oz packages Mexican mix shredded cheese 2-3 packages of (8) tortillas Enchilada sauce (see separate recipe) Salt and Pepper to taste

Directions: |
Directions:Sauté ground beef in pan with salt and pepper. Add a few tablespoons of the enchilada sauce once browned and drained. Set up your counter to assemble enchiladas. Take the tortilla and dip in the pot of sauce, shake excess off. Fill the tortilla with your meet filling and sprinkle the top with cheese. Roll tortilla and place seam side in your pan. Continue until complete with meet and tortillas. Cover the top with additional sauce until well covered. Sprinkle the top with cheese generously. Cover with tin foil. Bake at 350º degrees approximately 30 minutes or until heated through. |

Notes: May use pulled chicken, fish, veggies, black beans. Use your imagination! I prefer La Tortilla Non-GMO Hand Made Style Tortillas, combo corn/wheat. For (2) pounds of meat I use sauce made from (3) cans of diced tomatoes. If you have extra ingredients at the end - freeze for another time.
