3 eggs
1 c. milk
1 c. flour
2 T butter, melted

Directions:

Preheat oven to 400º

Beat eggs and milk. Stir in flour. Set aside.
Spray muffin tins. Divide butter evenly into muffin tins ½ tsp. per cup
Place tins in oven 5 minutes. Remove from oven.
Distribute batter evenly among tins ⅔ full.
Place tins on baking sheet in case butter flows over edges.Bake 8 minutes.
Reduce heat to 350º and bake another 20-25 minutes until golden and puffed up.

Remove tins from oven and let sit 5 minutes. Centers will sink in and form cups. Using a spoon remove puddings from tins.

Serve hot, topped with gravy, as a side with Roast Beef.
