1 round steak (1 1/2 " thick 2 1/2 to 3 lbs) 1 tsp. salt
1/2 lb. fresh mushrooms 1/8 tsp. pepper
1/2 cup chopped parsley 3 Tbsp. shortening or oil
1/2 cup chopped onion 10 1/2 oz can condensed consommé
1 cup grated sharp Cheddar cheese 1/2 tsp. dry mustard
1/4 cup all-purpose flour

Cut steak in 6 portions. Pound steak to 1/4 inch thickness (or buy tenderized) Remove mushroom caps from stems; cup stems and reserve caps. Combine mushroom stems, parsley, onion, and cheese in mixing bowl. Place approximately 3 tablespoons mushroom mixture in center of each piece of steak, reserving remainder of mixture. Roll steak pieces around stuffing and fasten with skewers. Tie with string (if desired)

Combine flour, salt and pepper. Dredge meat in seasoned flour. Brown in shortening in large skillet. Pour off drippings. Combine consommé and dry mustard. Add to steak rolls. Add mushrooms caps. Cover tightly and cook slowly over low heat 45 minutes. Add remaining mushroom mixture and continue cooking 45 minutes or until meat is tender, if gravy is desired. Thicken pan juices with cornstarch.

Very tasty!! Great company dish and can all be prepared early to actually heat when company arrives I have served mashed potatoes with this Yummy!!
