⅓ cup - uncooked white rice, not rinsed
¼ teaspoon - salt
¼ cup - white sugar
½ teaspoon - vanilla
¼ teaspoon - nutmeg
½ teaspoon - cinnamon
¾ cup - raisins
4 cups - milk, scalded
2 teaspoons - butter

Directions:
Directions:
1. Preheat oven to 300ºF.
2. In a 1 quart baking dish combine rice, salt, spices, raisins and sugar. Stir in scalded milk and dot with butter.
3. Bake in preheated oven for 1½ hours, or until rice is very tender and milk is thick and creamy. Stir gently with a fork every 15 minutes during the first hour.

For Chocolate Rice Pudding add 2 tablespoons unsweetened cocoa and an additional 2 tablespoons of sugar.
