3lb boneless Beef Chuck Roast
2-3 Sweet Potato cut into big pieces
4 Carrots, chopped largely
1 Onion, sliced
2 sprigs Rosemary
2 Bay Leaves
2 cloves Garlic, minced
1/3c Balsamic Vinegar
1/2c Beef Stock
2T cooking fat or Butter

Directions:
Directions:
Season roast on all sides with salt and pepper. Melt cooking fat or butter on med/hi heat and sear roast 2-3 minutes on each side. Place in slow cooker and top with onion, garlic, vinegar, beef stock, bay leaves and rosemary. Cook on low 6hrs. Add carrots and sweet potato, set to high and cook another 3hrs until vegetables are soft. Remove bay leaves and rosemary sprigs. Pour liquid into saucepan and bring to boil over med/hi heat. Cook until reduced to desired consistency. Pour sauce back in cooker and serve.
