1 small onion chopped
3-4 rashers bacon diced
dash of oil
3 C self rising flour
2 tsp dry mustard
½ tsp each salt & pepper
2-3 tbsp chopped parsley
1½ C grated tasty cheese
425gm can Baked beans
2 eggs
1¼ C milk
100gms melted butter

Directions:
Directions:
1. Cook onion and bacon in dash of oil in frypan until cooked and softened. cool.
2 Sift the flour, mustard, salt and pepper into a large bowl. Stir in the parsley and one cup of cheese. Make a well or hole in the middle.
3. Mix onion mixture, baked beans, eggs and milk together and pour into the dry ingredients, stir gently to mix, adding the melted butter as you mix. Do NOT overmix as the muffins will peak.
4. Divide the mixture evenly between 12 well greased muffin tins and sprinkle the tops with remaining grated cheese.
5. Bake at 200 degrees centigrade for about 15mins until well risen and golden. Cool in the tins for 3-4 minutes before transferring to a cake rack. serve warm

Else puts small tsp cream cheese in the middle! Put in half the mixture add the cream cheese then add the rest of mixture
