16 oz. grated extra sharp cheddar cheese
16 oz. grated medium cheddar cheese
1 small onion, pureed
1 cup mayonnaise
1 tsp red pepper

1/2 cup chopped pecans
1/2 cup pecan halves or large pieces
18 oz quality strawberry preserves
parsley for garnish

Directions:
Directions:
Mix cheeses, onion, mayonnaise, and red pepper.
Sprinkle 1/2 c chopped pecans into bottom of ring mold pan.
Press cheese mixture into pan. Chill.
Unmold onto serving plate and press pecan halves into sides of cheese ring.
Pour strawberry preserves into center. Garnish with parsley. Ring with butter crackers.
