Chocolate Zucchini Cake Recipe

Ingredients: 4 oz. chocolate chips, melted 1½ c. canola oil 3 c. white sugar 4 eggs 3 c. grated zucchini, drained 3 c. all purpose flour 1½ tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1 c. finely chopped pecans (optional)

Directions:Preheat oven to 350º
Mix oil and sugar. Add eggs. Beat 2 minutes, then add zucchini and mix. Mix dry ingredients together and gradually add to zucchini mixture. Stir in melted chocolate and nuts (if using). Pour into greased baking pans.
Bake for 1 hour + 15 minutes or until toothpick inserted comes out clean. Let cool 15 minutes before removing from pan. |

Notes: BAKING PANS I have done this recipe in a Bundt pan, 2 round cake pans (as a layer cake), as well as a 9x13 pan for the residents. However, your cooking times may vary a little so as a rule of thumb, I always start timing at 20 minutes then keep checking. If making it as a layer cake or 9x13...just top it with Chocolate icing.
DOUBLE CHOC. ZUC CAKE For the chocolate lovers - add 1 cup chocolate chips to batter (not melted)
It is a VERY moist cake and for those that don't like their veggies..they'll never know if you don't tell them! ;-)
