1 gallon hot water
450gm Kosher Salt
2 litres veggie broth
450gm honey
bag of ice

Directions:
Directions:
Combine hot water and salt in 54 quart cooler
Stir in Veggie broth and honey. Stir until dissolves
Add ice
Place turkey in cooler breast up
Soak for 12 hours

Smoke turkey until breast is 160deg.

9kg turkey takes about 6 hours at 250F
