Ice Box Cake Recipe

2 cans evaporated milk
2 packages jello (we like lime)
6 TBSP sugar
2 tsp lemon juice
1 box of ice box cookies (thin chocolate wafers)
4 TBSP butter

Directions:
Directions:
Open the cans of milk and pour into a large plastic dish and place in the freezer until slushy - a few hours.

Grind a box of the ice box cookies with 4 TBSP butter and lay crumbs on the bottom of a 13x9 pan. Reserve a few tablespoons of the choc. crumbs to sprinkle on top of cake.

Remove frozen milk from freezer and place in large bowl. Use a mixer to whip up until double in size.

Mix 2 packages of jello with 1/2 cup very hot water. Add 6 TBSP sugar and 2 tsp. lemon juice. Mix well and add to the evaporated milk.

Carefully pour the filling mix onto the crumbs in the pan and then sprinkle the reserved chocolate crumbs on top. Freeze until firm.

This recipe came from my mother in law, Jean Sickonic. It was always Dan's favorite and was a birthday staple. It is very refreshing in the summer. It's very unusual. you would not think it is good, but it is really a nice treat.
