1/4 cup flour
1 cup sugar
1/4 tsp salt

1 1/2 tsp lemon rind zest
1/4 cup fresh lemon juice
2 egg yolks, beaten well
1 cup milk

2 egg whites, beaten until stiff

Directions:
Directions:
Combine the flour, sugar and salt in a large bowl. Stir in the lemon rind zest, lemon juice, well beaten egg yolks and milk.

Fold in 2 egg whites which have been beaten until stiff.

Pour into a one quart baking dish or 6 custard cups.
Bake at 350 for 50 minutes.

Serve warm or cold with or without whipping cream.
