2 Tbsp peanut oil
1 onion, chopped
2 c shredded cabbage
3-inch piece of ginger, peeled and grated
˝ tsp turmeric
1 c cream
˝ c water
˝ c buttermilk
1 bunch Swiss chard, shredded
˝ tsp salt

Directions:
Directions:
1. Heat oil in a large sauté pan with lid over medium heat. Sauté onion in oil until translucent, about 7 min. Stir in cabbage, ginger, and turmeric. Sauté until the cabbage begins to wilt, about 5 minutes more.

2. Add cream and water to pan. Cover and simmer 10 minutes, stirring occasionally.

3. Remove the pan from heat. Stir in the buttermilk and Swiss chard. Stir until the chard wilts. Add salt to taste and serve.

This South African-inspired dish is a beautiful mélange of flavors. The residual heat of the cream base cooks the chard just enough to wilt it without overcooking it, and the ginger and turmeric paired with the cream make this vegetable side sing.
