1 fennel bulb, quartered and separated
1 package pancetta, slices halved
2 Tbsp brown sugar
½ tsp lemon juice
1 Tbsp water
salt and pepper
spring mix salad greens
Your favorite dressing (I suggest a vinaigrette)

Directions:
Directions:
1. Preheat oven to 400º

2. Toss fennel and pancetta with sugar, lemon juice, water, and salt and pepper until coated. Arrange on a baking sheet. Cook until the sugar caramelizes, about 15 minutes.

3. Toss the pancetta and fennel with the mixed greens and dressing. Serve immediately.
