Ingredients: 1 head of cauliflower 1 can of corn 1 can of black beans 1 onion, diced 2 Tbsp. butter 2 Tbsp. vegetable oil 3 cloves of garlic, minced 1 bell pepper, sliced 1 lime juiced Tortillas Salsa

Directions:Remove leaves and stem from the cauliflower head. Break into small parts and add to a blender. Using short quick pulses, break down the cauliflower until it is about the size of rice. Add directly to a large pan on high heat with vegetable oil Let the cauliflower sit for about 5 minutes to get rid of some of the moisture. Add butter, onion, and garlic and cook until onions are done. Add the spice mix (below) and stir.
In another pan, sauté peppers, corn and beans. Add the lime juice and set aside.
Using the 2 mixtures, build your tacos!

Notes: When Casey and I first met, I learned what a pescatarian is, which is a person who is a vegetarian, but also will eat seafood, because, you know.... sushi.
So one of the challenges I faced when cooking, was taking some of my favorite meals and making them friendly with her food preferences. Hence, cauliflower tacos.
It still tastes like cauliflower, but with the spices, and the way the cauliflower was prepped, it really started to mimic what an every-day chicken or beef taco would taste like. It was a great, and, I think, one of our first culinary compromises!
P.S. If you are anything like Casey, take the required amount of garlic for a recipe and just about double it.
