Directions:Let thawed fish sit for about 30 minutes to get them to room temperature. Coat the fish in flour and let sit for about five minutes. Add chips to a food processor or blender and grind until its about the consistency of bread crumbs. Crack the eggs into a bowl and whisk. Coat the fish in the eggs and then the potato chips, ready to fry. Get a large pan, or cast-iron skillet, heated over medium-high heat, then add enough vegetable oil to cover the bottom of the pan. Once the oil is nice and hot add the fish to the pan. Cook the fish roughly 3 minutes per side or until golden brown and cooked all the way through.

Notes: This one goes out to COVID-19. If it was not for you, I never would have come up with this recipe in desperation of not leaving the house to go to the grocery store for proper ingredients.
Seriously though, while in lockdown, we made it a habit to go to the store once every 4 weeks. This means we were leaning on a lot of non-perishables and frozen foods. We would buy the tilapia from Aldi and would make this at least once a week. Now, I was never that big of a fan of tilapia, let alone frozen fish. So the first time I went to cook them, I decided to fry them. One problem though, we had no bread crumbs. What we did have was 2 bags of potato chips that we were not eating. So I figured, what the heck, let's make "fish and chips" a very literal dish.
** Side note, we have tried this with regular potato chips, salt and vinegar chips, nacho cheese Doritos, and the sweet chili Doritos (our favorite)
