Loree Pederson

Bottom Layer:
6 egg whites
tsp. cream of tartar
1 cups sugar
1 box Danish dessert (Junket)
1 pkg. frozen strawberries, thawed and drained

Top layer:
2-3 oz. pkg. cream cheese
cup sugar
1 tsp. vanilla
1 pt. whipping cream
2 cups miniature marshmallows

Preheat oven to 400

Beat egg whites and cream of tartar until very stiff. Add the sugar very slowly, beating constantly. Put in greased and floured 9x13 pan, put in oven and turn off heat. Leave in overnight. The next day, cream the cream cheese, sugar, and vanilla. Beat the whipping cream and add to the cheese mixture. Add the marshmallows and spread over meringue and refrigerate at least 6 hours. Top with the fruit sauce using the strawberries and the recipe on the box of Junket. Use the juice from the strawberries, adding enough water to make up the total amount.
