½ package noodles *
¼ cup olive oil
⅓ cup red wine vinegar
2 cups ripe tomatoes, diced
12 oz. chicken breast, cooked and diced
½ cup scallions, chopped
½ cup yellow bell peppers, diced
½ cup feta cheese, crumbled
2 tbsp. Grated parmesan cheese
1 tbsp dried basil
Salt & pepper for taste

*Noodles can be mostocholli, bow tie, macaroni, spaghetti

Directions:
Directions:
Cook pasta “al denote” (firm tot he bite), for full flavor (approx 8-9 min).
Drain & place hot pasta in large mixing bowl, pour olive oil and red wine vinegar over pasta. Add tomatoes, chicken breast, scallions, and bell peppers. Toss well. Add feta and parmesan cheeses, basil, salt and pepper. Mix and serve immediately.
