"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

Ingredients:
Ingredients:
4 limes
1 tsp whole cumin
1 tsp garam masala
½ onion, peeled and diced
1 clove garlic, smashed and minced
½ serrano pepper, cored and minced
handful of cilantro, leaves only, finely chopped
8 ripe avocados
¼ tsp salt

Directions:
Directions:
1. Toast cumin and garam masala lightly in skillet until fragrant. Set aside.

2. Juice limes into a large bowl. Add onion, garlic, pepper, and cilantro, and stir to combine.

3. Cut avocados in half, remove the pits (keep at least one aside for storage), and scoop the flesh into the juice and vegetable mixture. Add toasted spices and salt. Mash together until the mixture is your desired consistency. Serve with chips or other accompaniments.

If there is guacamole leftover, add a pit to the guacamole and cover tightly with plastic wrap before refrigerating. The lime juice, pit, and covering should prevent it from turning brown.

Personal Notes:
Avocados will always remind me of my California family. I like my guacamole packed full of lime juice and enhanced with warm Indian spices.
