1/3 c. beef fat (from Prime Rib) or vegetable oil
6 eggs
1 1/2 c. flour
1 t. salt
1 t. thyme
1 t. rosemary
1/2 t. pepper
2 c. milk
1/4 c. heavy cream
4 ounces of cheese (goat, cheddar, etc)

Directions:
Directions:
Mix eggs, flour, salt, thyme, rosemary, salt and pepper until well blended. Add milk and cream. You can let it sit while the oven preheats.

Preheat oven to 400 Brush 18-20 of muffin or popover pans with the melted fat from Prime rib. Put pans on cookie sheet to avoid overflow. Heat muffin pans in oven for 5 min. remove from oven and put 2/3 batter in each cup add cheese. Return to oven and bake until golden brown about 20-25 min. Serve immediately with Prime Rib dinner.
