Blueberry French Toast Recipe

12 slices day old bread, crusts removed
2 8oz. packages cream cheese
1 c. blueberries
12 eggs
2 c. milk
1/3 c. maple syrup

SAUCE:
1 c. sugar
2 Tbsp. cornstarch
1 c. water
1 c. blueberries
1 Tbsp. butter

Directions:
Directions:
Grease a 13x9" pan.
Cut bread into 1" cubes.
Place one half of the bread in the prepared pan.
Cut cream cheese into 1" cubes.
Place over bread.
Top with 1 c. blueberries.
Top with remaining bread.

In a large bowl, beat eggs. Add milk, then syrup. Mix well.
Pour over bread mixture.
Cover and chill overnight.
Remove from refrigerator 30 minutes before baking.
Bake for 30 minutes at 350 degrees.
Uncover and bake 25-30 minutes more.

In saucepan, combine sugar and cornstarch. Add water. Bring to a boil for 3 minutes. Stir in blueberries. Simmer 8-10 minutes. Stir in butter. Serve over French Toast.
