2 eggs + 3 egg whites, beaten
1 small onion, minced
3 tbsp minced parsley
½ tsp dried oregano
1½ tsp poultry seasoning
2 garlic cloves, minced
1¼ c finely crushed saltines
¾ c ground walnuts
¾ c shredded cheddar cheese

Apricot BBQ Sauce
¾ c apricot fruit spread
½ c ketsup
¼ c lemon juice
2 tbsp onion, minced
1 tbsp veg oil
½ tsp salt

Directions:
Directions:
Preheat oven to 350º

Combine first six ingredients in a bowl. Add crackers, walnuts, and cheese.
Mix well and shape into 1" balls.
Place in greased 13x9 pan

In a small saucepan combine sauce ingredients. Bring to a boil. Pour over walnut balls.

Bake uncovered for 25 min.
