3 large ripe bananas
3/4 cup white sugar
1 egg
1/3 cup melted butter
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cup all purpose flour

Directions:
Directions:
Mash bananas.
Add sugar and slightly beaten egg.
Add the melted butter.
Add dry ingredients.
Bake at 375 degrees for 20 min.
Yields 9 large muffins or 2 dozen mini muffins.
If cooking mini muffins cook 8-10 min then check.

Always check cooking early, so don't overcook.
If bananas are overripe throw in freezer until ready to use.
Just take out of freezer and let unthaw. Perfect for baking.
