1 cup white vinegar or Sukang Maasim
¼ cup soy sauce
1 whole garlic bulb, smashed and peeled
2 tsp. Kosher salt
1 tsp coarsely ground pepper
1 bay leaf
2 lbs. bone-in chicken chicken thighs or drumsticks or 2 lbs. pork shoulder
1 Tbsp. canola or vegetable oil
1 cup water

In a shallow dish, combine first 6 ingredients (vinegar through bay leaf). Add chicken/pork; covere and refrigerate for 20-30 minutes. Drain chicken/pork and reserve marinade, Pat chicken/pork dry. In a large skillet, heat oil over medium-high heat; brown chicken/pork. Stir in water and reserved marinade. Bring to a boil. Reduce heat; simmer, uncovered, until chicken/pork is no longer pink and the sauce is slightly reduced and thickened, 20-25 minutes. Discard bay leaf. Serve chicken/pork with cooking sauce.

This is a dish that has been recreated with every generation and adjusted to taste by every region, but all of them share the same basic components. There is no other dish than Adobo that resembles how diverse the Filipino culture is. I love the simplicity of the recipe but it gives amazing flavors. You can also add hard boiled eggs in it!"
