Chili Rubbed Grilled Steak Recipe

Flank steak -- 4-6 oz. per person
1/2 oz. red chili powder
Fresh rosemary
Olive oil

Let meat come to room temp. (about 30 min.)
Rub meat with rosemary and red chili powder.
Prepare both sides of the meat by salting generously and peppering moderately.
Place seasoned meat in a dish and drizzle olive oil generously on both sides.

Prepare a hot grill and grill meat to a rare to medium rare consistency, roughly 4-5 minutes per side.
Once cooked, let meat rest for at least 8 minutes.

Slice the meat on the bias and serve with risotto or potatoes.
This steak also makes a fantastic steak sandwich or served on greens for a steak salad.
