Personal Notes:
This recipe is from Chris Maher and the Cooking Studio of Taos, NM, which he and his wife Valerie run from their beautiful home. I spent a week during the summer of 2018 at OSU's Doel Reed Learning Institute in Taos and took a cooking class that focused on northern New Mexican cuisine. Two full days of our course were spent at Chris' home. Chris is a former actor and Los Angeles, CA restauranter.
