Ingredients: 1 Sleeve from Box of Fiber One Cereal 1 12 oz package of Semi Sweet Chocolate Chips

Directions:Cover a 2 cookie sheet with wax paper. This is very important. If you don't use wax paper the cookies will stick to the surface and will be hard to get off.
Melt entire package of chocolate chips in a double boiler. Stir the chips until mixture is smooth and completely melted. Pour the package of the cereal into the double boiler. Stir until the cereal is completely covered. This step will take awhile. You have keep on bringing the cereal from the bottom of the pot up to the top. It will look like it is not possible to coat but just keep on stirring from underneath to top. The mixture is ready when the cereal is completely coated with chocolate.
Form cookies with a tablespoon and put onto wax paper. Make the size that you want them to be. Don't let them touch each other. Put cookie sheets into the freezer. Once they are hard, does not take too long, take them off of the cookie sheets and store in freezer in plastic bags. They last in the Freezer for a long time. |

Notes: I originally got this recipe from someone at weight watchers. At that time they were 1 point for 2 cookies. I started making them for family and everyone loved them so I just make them because they are delicious.
I tried substituting the Fiber one for Rice chex for the Gluten free in the family and they were just as good. I used my judgement on how much of the cereal to use as there is not individual sleeve. I filled the pot about 3/4 full with the cereal to 12 oz of the chips. Add more if you think you need to.
