• 1 large onion (quartered, thinly sliced)
• 6 potatoes peeled and cut into 1/4-inch slices)
• 1/2 to 1 teaspoon salt (or to taste)
• Freshly ground black pepper (to taste)
• Vegetable oil to cover the skillet

Heat the vegetable oil in a large, heavy, nonstick skillet or electric skillet over medium heat. Add the sliced potatoes, about 1/2 teaspoon salt, along with the freshly ground black pepper. Cover the pan and cook for about 10 to 15 minutes, or until potatoes are just tender. Add the sliced onion. Uncover and increase the heat to medium-high. Continue cooking for about 8 to 10 minutes, occasionally turning, until the potatoes are golden brown.

The best fried potatoes are crispy outside and soft inside. To ensure this result and avoid soggy potatoes, don't overcrowd the pan and keep it hot. Also, uncover the skillet at the end of the cooking time to release steam. They'll crisp up perfectly as they finish.
