3 c. fresh strawberries, halved
3 1/2 Tbsp. red wine vinegar
2 1/2 teas. sugar
1/2 teas. kosher salt
1/8 teas. ground black pepper
2 Tbsp. canola oil

Directions:
Directions:
Use a food processor or blender to pulse strawberries until smooth.
Strain through a fine mesh sieve into a bowl, pressing with a spatula to separate seeds. Discard the seeds.

Add vinegar, sugar, salt, and pepper to the strawberry puree. Whisk to combine.
Whisk in oil.
Serve immediately, or cover and refrigerate up to 1 day.
